Matcha is an exceptional tea experience, the center of the famed Japanese tea ceremony. For the last few weeks before harvest, the plants are shaded, to make the flavor more intense. After harvest the leaves are allowed to dry so that they crumble slightly, allowing the stems and veins to be picked out. Finally, the leaves are ground into a fine powder. It is prepared with a special bowl and whisk, making a frothy and powerful drink unlike any other.
